BANANA COOKIES RECIPE

These cookies taste like your favourite banana bread, but they're made of bananas. If you'd rather, you can leave out the nuts or add chocolate chips instead. 

– 2 ½ cups (315 grams) all-purpose flour (spooned & leveled) – 1 teaspoon baking soda – 1 teaspoon ground cinnamon – ¼ teaspoon salt – ¾ cup (170 grams) unsalted butter (softened) – ¾ cup (150 grams) granulated sugar

– ½ cup (100 grams) packed light or dark brown sugar – ½ cup (125 grams) mashed banana – 1 large egg yolk (room temperature) – 1 teaspoon pure vanilla extract – ¾ cup (90 grams) chopped walnut

Direction

Banana cookies bake quickly. In a large bowl, combine flour, baking soda, cinnamon, and salt. Mix butter and sugars in a paddle-attached stand mixer bowl until combined.

Mix in mashed banana, egg yolk, and vanilla. Mix the dry ingredients with the butter until just combined. For banana-nut cookies, add chopped walnuts now.

Transfer cookie dough to three parchment-lined baking sheets using a 1.5 tablespoon cookie scoop. Cookie dough balls spread in the oven, so leave space between them.

Cookie tops and edges should be set and lightly browned. They'll set after 10 minutes on the baking sheet. Transfer cookies to wire racks to cool completely.
