Banana pancakes recipe

Simple banana pancakes can be made with kitchen staples. They're always light and fluffy. Holiday and weekend breakfast ideal!

– 1½ cups (190 grams) all-purpose flour (spooned & leveled) – 3 tablespoons (40 grams) granulated sugar – 2½ teaspoons baking powder – ½ teaspoon ground cinnamon

Ingredient

– ¼ teaspoon salt – 1 cup (240 ml) whole milk – 2 large egg – 2 tablespoons (30 ml) canola or vegetable oil – 1 teaspoon pure vanilla extract – 1 cup (250 grams) ripe mashed banana

Direction

Place a large skillet or griddle on medium heat and spray with nonstick cooking spray. Mix flour, sugar, baking powder, ground cinnamon, and salt in a large bowl.

Whisk milk, eggs, oil, pure vanilla extract, and mashed banana in a separate bowl until combined. Be careful not to overmix the batter as you add the dry ingredients to the wet.

Pour ¼ cup batter onto a hot skillet or griddle. After top bubbles and edges set, cook pancakes for 1–2 minutes. Warm banana slices and maple syrup.
