Glory muffins recipe

There are lots of good things in these muffins, like apples, walnuts, raisins, and coconut. It's great for Mother's Day or Easter! 

– 1 cup (125 grams) all-purpose flour (spooned & leveled) – 1 cup (125 grams) whole wheat flour (spooned & leveled) – 1 teaspoon baking soda – 1 teaspoon baking powder – 2 teaspoons ground cinnamon – ½ teaspoon salt

Ingredient

– ¾ cup (180 ml) canola or vegetable oil – 1 cup (200 grams) packed light or dark brown sugar – ¼ cup (60 grams) applesauce (unsweetened or regular) – 3 large egg – 2 teaspoons pure vanilla extract – 2 cups (200 grams) freshly grated carrot

– 1 cup (175 grams) shredded apple – ½ cup (45 grams) shredded sweetened coconut – ½ cup (80 grams) raisin – ½ cup (60 grams) chopped walnut

Direction

The oven should be 375°F (190°C). Double 12-count muffin pans need 15 muffin liners. Mix all-purpose, whole wheat, baking soda, baking powder, cinnamon, and salt in a large bowl.

Whisk oil, brown sugar, applesauce, eggs, and vanilla extract in a large bowl until combined. Mix grated carrots, apples, coconut, raisins, and walnuts with the wet ingredients.

Stir the dry and wet ingredients together until just combined. Fill muffin liners to the top with batter.

Bake 20–25 minutes until the muffin tops are set and a toothpick inserted into the center comes out clean. After 5 minutes in the pan, finish on a wire rack.
