Set butter out ahead of time to soften. This makes frosting creamy and smooth. Two sticks of unsalted butter—230 grams—makes 1 cup.

Beat butter with a mixer for 1 minute until smooth. This recipe works with a handheld or stand mixer!

Next, add powdered sugar. I usually make this frosting with 3 cups of powdered sugar. Some recipes require more powdered sugar, but I only need 3 cups. Sifting powdered sugar is optional, but I usually skip it.

Note: Start mixing the powdered sugar and butter on low speed to avoid spilling it. To simplify, mix powdered sugar in 1 cup at a time.

After mixing the butter and powdered sugar, add the heavy cream, vanilla, and a pinch of salt. Stop and scrape the bowl sides and mix again to ensure everything is combined.
