Kalács-Hungarian Nut Roll Recipe

You can give four rolls from this recipe to loved ones. I finally have time to finish some recipes from recent months. I don't know why it took me so long to share this kalács (Hungarian nut roll) recipe, which I love.

Ingredient

– ½ cup milk – 2 package – ½ teaspoon plus 5 tablespoons sugar – 4 cups flour – 1 cup 2 sticks unsalted butter – Zest of 1 lemon – 5 large egg yolk – ¼ cup sour cream – For the Filling – 1 ½ pounds walnut – 1 cup sugar – ⅔ cup raisin – 2 Tbsp. brandy – ⅓ cup warm milk – 1 large egg white – 1 whole egg

Make dough by heating milk in a saucepan until lukewarm. Fill mixer bowl with milk. Mix yeast and 1/2 teaspoon sugar; foam 10 minutes. Mix butter and egg yolks separately. Mix sour cream, lemon zest, and 5 tablespoons sugar.

Mix the ingredients with a wooden spoon and clean hands to make the dough. A good warmup. Hand-knead dough until smooth and non-sticky. Follow the remaining instructions.

Slowly add flour by the cup. Scrape bowl sides and add flour slowly.  Add remaining flour slowly. Stop the machine to mix each cup flour. Add dough slowly. Ideal dough is soft and flexible. Sticky? One tablespoon flour at a time.

Wrap in plastic and let rise at room temperature until doubled (1-1 1/2 hours). Making filling: Set aside the walnuts, sugar, raisins, brandy, and milk after mixing in a small bowl.

Put 1/4 of the filling within ½-inch of the edges. Leave dough edges unfilled. Roll dough with the longer side in front and pinch seams with egg white.

Place two seam-side-down log rolls on each baking sheet. Cover loosely in plastic. Use remaining dough. Let rise covered for 45 minutes. Cut the dough into 4 even pieces for 2 large or 4 small rolls.

Apply the whole beaten egg to the loaves.Bake each pan at 325F. Bake 40–45 minutes until lightly browned. Cool bread on a wire rack for 15 minutes. Sugaring is optional.Slice and serve warm or room temp.
