A simple way to make lemon curd in the microwave. Make this Microwave Lemon Curd. It's easy, tastes great, and can be used in a lot of different ways.
– 1/2 cup (115 grams) unsalted butter , melted and slightly cooled– 1 cup (200 grams) granulated sugar– 3 large egg– 1 large egg yolk– 1 cup (240ml) freshly squeezed lemon juice– Zest of 1 lemon (about 1 tablespoon)
Mix the melted butter and granulated sugar in a large microwave-safe bowl (use one larger than you think you'll need). Mix the eggs and egg yolk until well combined, then add the lemon juice and zest.
After each 1-minute increment, remove the curd from the microwave and mix well. My lemon curd takes about 5 minutes to coat the back of a spoon, but yours may take longer. Watch it while microwaving to avoid spills.
Pour the curd through a fine mesh strainer into a clean, heat-safe container and cover with plastic wrap after removing from the microwave. Cool completely and refrigerate until use.
